Is this meal spicy?
Yes, this meal has a good amount of spice. It is a Pho, after all! Heat is subjective, so if you are the type to find a medium salsa way too hot, then you might steer clear. If you have a tolerance for and enjoy spicy foods, you'll find this dish to be a nice medium-level heat.
X Tear pouch open and REMOVE oxygen absorber and lime packet(s) (1 lime packet for single serving, two for double serving).
X SINGLE SERVING Add a little more than one and a half cups (400ML) of BOILING (yes, boiling) water to bag.
X DOUBLE SERVING Add three and a third cups (800ML) of BOILING (yes, boiling) water to bag.
X STIR and reseal. HANG OUT for 10 minutes. Think about how big the universe is.

This is my favorite backpacking meal of all time! Sometimes I buy extra ones just so I can have some to eat while I am work for a quick go to dinner. Every time I find them on sale, I buy as many as I can.
The packaging says there's supposed to be a "lime packet" and I couldn't find it so I dumped the whole thing out in a bowl and only ever found the desiccant packet. Looking at the online packaging, I'm assuming I just got unlucky and got one made around a reformulation of the recipe. Expiration is 12/13/23 and I ordered it from the website on 10/13/22. 14 months isn't very long shelf life when half of the other meals last until 2027. I'm blaming that on the fact that this has chicken as the first ingredient.
I missed having Thai basil and Sriracha along with my pho, and it has so much cabbage it was unusual crunchy but it wasn't too bad. Noodles cooked up fine, but the chicken did have more of a meat floss texture than chunks. Makes for easier rehydration at least. Lots of food in a one serving packet and it's challenging for me to finish when sitting in the comfort of my own home.
This pho is soooo good that sometimes I just eat it for lunch in the office. I have a legume allergy (think soy, beans, peanuts) and it is SO hard to find backpacking meals that are lightweight and allergy-friendly. This meal is perfect. 🤤
I picked up this meal at Environeers in Sarasota, Florida. I needed some more fuel for my Jet Boil and saw these packets nearby. I decided to try a couple, since the owner of the store recommended them as being very healthy and tasty, too. Well, yesterday, after a quiet Christmas, I decided to try the Chicken Pho. All I can say is WOW! It was VERY DELICIOUS! I will be ordering more. The flavor was outstanding and it was packed with noodles, tasty chicken and vegetables. Highly recommend.
