Pho yeah!
dinner is usually my big meal for the day, so I was a little skeptical at how filling this would be after a solid day of hiking (and snacking). my skepticism was soon met with a great melange of flavors, and a surprising amount of noodles. I did add unsalted pumpkin seeds, because why not? sometimes, when I'm feeling lazy, I make one of these for dinner at home, and always feel good about my decision.
